What is Palm Oil Fractionation?
Palm oil fractionation is a physical separation method that relies on the differing melting points of triglycerides within palm oil. By precisely controlling cooling, crystallization, and filtration conditions, producers can separate palm oil into fractions with specific characteristics.
- Palm olein (liquid fraction): Commonly used in frying oils, salad oils, and cooking oils due to its clarity and stability.
- Palm stearin (solid fraction): Suitable for margarine, shortening, baking fats, and industrial applications.
It is important to note that palm oil refining must precede fractionation. Only refined, bleached, and deodorized (RBD) palm oil can be effectively fractionated, ensuring the production of high-quality, flavorless, and stable fractions.
Palm Oil Fractionation Process
The palm oil fractionation process comprises two main stages:
1. Crystallization
During this stage, RBD palm oil is slowly cooled under controlled conditions. Triglycerides crystallize at different temperatures, forming solid crystals within the liquid oil. Factors such as temperature, cooling rate, and agitation significantly influence crystal formation and quality.
2. Filtration
The crystallized palm oil is then fed into a filtration system (typically a membrane filter press or vacuum filter) to separate the solid phase (palm stearin) from the liquid phase (palm olein). This yields two valuable products with distinct melting characteristics and applications.
