1. Cold Pressed Walnut Oil: Preserving Purity and Nutrition

Process Flow: Walnut Shelling -> Crushing -> Cold Pressing -> Crude Oil Filtration -> Oil Refining -> Finished Cold Pressed Walnut Oil.

The cold pressed walnut oil method is the ideal choice for producing high-grade, nutrient-rich oil. This process involves pressing walnut kernels at low temperatures (typically below 60°C / 140°F) to preserve the oil’s natural flavor, light color, and nutritional integrity.

The hot pressing method utilizes a screw oil press to achieve a higher extraction rate. This is a robust solution for high-volume walnut oil production.

  • Advantages: Higher oil yield, a more robust and aromatic flavor, and a darker color. The oil also has a longer shelf life.
  • Consideration: The high temperature in the press chamber can lead to some loss of heat-sensitive nutrients and protein denaturation.

Walnut Oil Pretreatment Process

Efficient pretreatment ensures higher oil yield and superior refining results. Key steps include:

Walnut Shelling

Select plump, uncontaminated walnuts and shell them mechanically or manually. Minimize kernel breakage to preserve oil yield. Post-shelling, use a walnut cleaning and grading system to remove shell fragments and impurities.

Nut Kernel Crushing

Crush walnut kernels into smaller particles (0.5-1 cm) to increase contact area with the pressing chamber, enhancing extraction efficiency.

Conditioning and Steaming

During hot pressing, crushed kernels undergo steam conditioning before entering the press to regulate moisture and temperature. This step softens the material, improving oil extraction rates.

Oil Extraction

  • Cold Pressing: Temperature below 60°C.
  • Hot Pressing: Temperature approximately 120-130°C.

Walnut Oil Refining Process

Crude pressed oil contains impurities and needs refining to be palatable and stable. A complete walnut oil refining plant includes the following stages:

1. Degumming Process

This step removes phospholipids and gums from the crude oil.

Methods:
Acid Degumming: Heat the oil to 75°C, add 0.1%-0.3% food-grade phosphoric acid, and stir for 20 minutes.

Enzymatic Degumming (Advanced): Add phospholipase A₂, react at 45°C for 2 hours. This is a more efficient and environmentally friendly method.

Equipment: Degumming tank with stirring and temperature control.

Outcome: Residual gum content ≤0.1%.

2. Deacidification (Neutralization) Process

This process neutralizes Free Fatty Acids (FFA).

Method: The oil is mixed with a caustic soda (NaOH) solution in an alkali refining tank. The FFAs form soapstock, which is separated via centrifugation.

Equipment: Alkali refining tank and centrifugal separator.

Outcome: Soap stock residue ≤50ppm.

3. Decolorization (Bleaching) Process

The purpose is to adsorb pigments and other residual impurities.

Method: The oil is heated to 110-130°C under a vacuum and mixed with 2%-5% bleaching clay.

Equipment: Clay mixer and vacuum decolorization tank.

Outcome: Oil color reaches ≤Y30 R3.0 (Lovibond).

4. Deodorization Process

This final refining step removes volatile compounds, off-flavors, and odors.

Method: The oil is heated to 180-220°C under a high vacuum (≤ 0.1 Pa) and treated with steam.

Equipment: Deodorization tower (packed or thin-film).

Outcome: Removal of over 95% of odorous substances, resulting in a clean, neutral oil.
